There are 4 common aggregate choices when it comes to polished concrete. While there are different variations of each (Such as color), these are still the most common.

The Cream Polished Concrete Floor:

The cream look requires very little surface cut depth and has a small amount of aggregate exposure. This particular cream finished concrete has been stained.

The Salt and Pepper Polished Concrete Floor:

The salt and pepper look requires a 1/16-inch surface cut depth and has fine aggregate exposure with little or no medium aggregate exposure in random locations.

Medium Aggregate Polished Concrete Floor:

The medium aggregate profile requires a 1/8-inch surface cut depth and has a medium aggregate exposure with little or no large aggregate exposure at random locations.

Large Aggregate Polished Concrete Floor:

The large aggregate requires a 1/4-inch surface cut depth and has a large aggregate exposure with little or no fine aggregate exposure at random locations.

As you can see, there are a number of options with polished concrete floors. Each concrete slab is going to produce different results. Depending on the original concrete company responsible for laying the floors, it may or may not be level enough to produce a perfectly uniform polish.
